Study for renovation and addition of Stetson East Dining Hall to provide expanded seating and new specialty food stations. PCA’s study offered options to renovate and expand the food serveries, and upgrade dining and seating areas with a focus on Farm to Table.
To expand the heavily used dining hall and update to meet current student needs and trends. The goal was to focus on Farm to Table, local, fresh sourced ingredients, and incorporate Zone 7 allergen-free dining concept implemented by PCA at Northeastern’s International Dining Hall.
PCA proposed a two-phased solution. The 1st phase updates dining areas to be more appealing with rustic industrial vibe, setting the tone for future phases. The 2nd phase would create a 200-seat addition with servery expansion and upgrades. New food concepts include Zone 7 allergen-free dining, Terre VE (organic / local), Sushi / Asian, Bakery, and Salad updates. Site planning included area for a “Farm to Table” garden outside the new dining area.
