5,200 SF national prototype for freestanding bakery / cafe
Formulate a new prototype design, similar in cost to the previous prototype, to enhance Panera’s image as a “chill-out” space. Communicate Panera’s brand message at both highway and human scales. Utilize durable and inexpensive materials, and reconfigure to improve ordering logistics.
The new prototype blends the aesthetics of an industrial and neighborhood bakery to form an authentic experience. The distinction between serving and dining areas was better defined: the commissary and bakery feature exposed trusses, while seating areas feature a sloped interior ceiling and one of three available color configurations.
